The best salad ever-Pork Salad

Ok friends here is the recipe everyone has been asking for:
2 lb pork roast
1 can tomato sauce
1 bottle of el pato (NOT TO BE FOUND ANYWHERE IN PA SO WE USED La Victoria HOT SAUCE )
3/4 c brown sugar

Cook roast for 2 hour at 275 or until it is shreddable covered with chicken broth. Then take out and add the above ingredients (previously mixed together) and smother roast with it. Then let bake for another 1 hour.

Creamy Tomatillo Ranch dressing:
3/4 c buttermilk
1 clove garlic
1 can 4 oz green chilis
1 fresh jalepenos
1/2 c cilantro
1 tomatillo husk removed
1 tsp salt
dash tobasco (unless you are Jenna)
1/2 tsp lime juice
pinch of brown sugar
dash of cayenne pepper
ranch powder dressing (no generic!)
1 c mayo (no generic!)
Combine all in blender and let set in fridge for 1-2 hours.

Homemade Flour Tortillas (or if you are lucky enough to live in Arizona just buy the uncooked flour tortillas)

2 c flour
1tsp b powder
1/2 tsp salt
4 tsp crisco
1/2 c water.
Mix well, rest 10 min, knead 5 min rest 10 min. make into balls and let rest 10 minutes. Pat flat roll into circles with rolling pin. Then brown in a pan sprayed with pam.

Romaine lettuce
pico-de gallo bought from store
corn tortillas cut in strips and fried in oil
parmesan cheese
yellow mexican rice cook according to package directions
black beans
avocado slices

SO- make the dressing and tortillas. Then place the cooked tortilla in a bowl, then layer the rice, beans, pork, romaine lettuce, pico-de-gallo, and cheese. Top with the tortilla strips, avocado slices and dressing. YUM-worth the work (and calories)!
